Running virtual machines is a headache, but it's better than having a dedicated Windows machine or having to reboot to a bootcamp'd Windows install. Parallels doesn't allow for certain types of video acceleration, etc so I can't even run the WP7 emulator in 64 bit. It runs in 32 bit, but can't render our game, thus the need for a separate test device.
What is pictured up there is the deployment tool running in a Windows 7 VM that pushes the game I'm working on with Dave to my WP7 phone so I can play around with it.
